Teriyaki Salmon Bowls

Method

  1. 01

    Cook sushi rice per package directions. Stir through rice vinegar, sugar, and salt. Set aside.

    Whisk soy sauce, mirin, rice vinegar, brown sugar, sesame oil, garlic, and ginger for the teriyaki marinade.

    Heat a non-stick pan over medium-high with a drizzle of oil. Cook salmon 2--3 minutes per side until golden.

    Pour teriyaki sauce over salmon. Simmer and baste until sticky and cooked through --- about 2 minutes.

  5. 05

    Divide rice between bowls. Top with salmon, avocado, edamame, spring onions, and sesame seeds.

  6. 06

    Drizzle remaining glaze from the pan over the bowls.
