Whisk together all sauce ingredients and set aside.

Heat butter or oil in a large skillet or wok over medium-high heat. Add garlic and onion, cook 1 minute.

Add mushrooms, carrot, and bell pepper. Stir-fry until tender-crisp --- 3--4 minutes.

Add chilled rice, breaking up clumps. Stir-fry 2--3 minutes until heated and slightly crispy.

Pour in sauce and toss. Add pineapple, pak choi, and green onions. Cook 1--2 minutes more.
