Kimchi Grilled Cheese

Melt ½ tablespoon butter in a 12-inch nonstick skillet over medium-high heat. Add kimchi and cook, stirring occasionally, until heated through and sizzling --- about 2 minutes.

Stir in sugar, fish sauce, gochugaru, and Dasida powder. Cook until liquid has just evaporated --- about 1 minute. Transfer seasoned kimchi to a plate and set aside. Wipe skillet clean.

Melt half the remaining butter in the skillet over medium-high heat. Swirl bread slices to coat one side in butter, then transfer to a plate. Repeat with remaining butter for the other sides.

Place one bread slice buttered-side down. Layer on half the cheese, then seasoned kimchi, then sprinkle with garlic powder, onion powder, pepper, and chopped scallions. Top with remaining cheese and second bread slice (buttered-side up). Sprinkle a pinch of sugar on top.

Cook in the skillet over medium heat, pressing gently, until golden brown on the bottom --- about 3--4 minutes. Flip carefully, sprinkle sugar on the new top, and cook until the second side is golden and cheese is melted.

Cut in half and serve immediately.
