Honey Garlic Tofu with Coconut Rice

Method

    Press tofu for 15 minutes to remove excess moisture. Cut into ½-inch cubes.

    Toss tofu with salt, garlic powder, soy sauce, and sesame oil. Add cornstarch and toss until all pieces are coated.

    Bake at 400°F on a parchment-lined sheet pan for 22--25 minutes until crispy and golden, flipping halfway.

    Meanwhile, make coconut rice: bring coconut milk, water, and salt to a gentle boil. Stir in rice, reduce heat to low, cover, and cook 13--15 minutes until fluffy.

    Whisk together all sauce ingredients in a small bowl.

    Once tofu is crispy, heat sauce in a skillet over medium heat until thickened --- about 2 minutes. Toss crispy tofu in the sauce to coat.

    Serve over coconut rice with steamed vegetables. Garnish with sesame seeds and green onions.
