Baked Crunchy Hot Honey Chicken

Preheat oven to 425°F and line a baking sheet with parchment paper.

In a food processor, pulse cornflakes with Parmesan, paprika, onion powder, garlic powder, and a pinch of salt until you have fine crumbs. Transfer to a shallow bowl.

In another bowl, beat eggs with hot sauce. Toss chicken with chipotle chili powder, then add to egg mixture and coat well.

Dredge each piece of chicken through the cornflake crumbs, pressing to adhere. Place on baking sheet. Drizzle with olive oil.

Bake 20--25 minutes until chicken is cooked through and coating is crispy and golden.

While chicken bakes, warm honey and stir in cayenne pepper to make the hot honey glaze.

Drizzle hot honey over the crispy chicken while still warm. Top with fresh herbs and flaky salt. Serve immediately.
